Caprese Salad

While Homegrown tomatoes are still available...
This salad is a must try!
The tomato, basil, buffalo mozarella combo is ....
Delicious!!
Caprese Salad
Beefsteak Tomatoes
Buffalo Mozarella
Fresh Basil
Olive Oil
Balsamic Vinegar
Sugar
Salt and Freshly ground pepper to taste
Cut up the tomatoes and cheese in 1/2" thick slices and layer on platter.
Chop fresh Basil and sprinkle on tomatoes and cheese.
Drizzle olive oil and vinegar reduction over all.
Salt and pepper to taste.
Balsamic Vinegar Reduction
1 cup Balsamic vinegar
2 TBSP Sugar
Simmer untill reduced by 3/4 (about 30 min.)
Let cool to room temp.
(If sauce thickens too much when cool add 1 tsp water to thin it out)
