THAI PEANUT SALAD

• Prepare 1lb linguine according to package directions and drain
• Add four cups chopped vegetables to pasta and toss (snow pea pods, red and green bell pepper,cucumber,etc.)
• 2 Tbsp oil
• 1/4 c chopped green onion
• 3 Tbsp chopped cilantro leaves
• 1 bottle of roasted garlic peanut sauce
• generously salt and pepper
  (I added in addition to vegetable broccoli slaw, shredded carrots, fresh bean sprouts and you could also use less linguine and add more broccoli slaw for lower carb salad.)

STRAWBERRY SUMMER DREAM CAKE

CRUST

2 cups flour

1cup brown sugar

1 cup butter (softened)

1/2 cup nuts finely chopped

Mix together in mixer

and press in bottom of Jelly Pan

Bake at 375 for 8-10 minutes

til lightly brown.

While still warm stir crust to crumble.

Let cool.

Middle Cream Layer

Container of Cool Whip ,

Dream Whip or Real Whip Cream

I used a combo of all of the above

mix with 1-8oz cream cheese whipped

add 1 cup powdered sugar

Strawberry Topping
1 pkg. danish dessert

strawberry or raspberry

prepare as directed on box for pie glaze.

Fresh Berries washed and sliced.

Begin by layering

with the crumb mixture

reserve 1-2 cups for topping.

Drop cream layer by spoonfuls

over crumbs spread evenly.

Top with washed and sliced berries

then drizzle danish dessert over.

Finish by topping with crumb mixture.
