PUMPKIN SOUP

Amazing what you can make from left-over canned pumpkin.

1 can mashed pumpkin
( I used large can because I made the pumpkin roll and had leftover pumpkin)
6-8 cups water or chicken broth
Note: if you use water flavor with chicken boullion
1/2 small onion
1 celery stick
handfull of baby carrots
Puree the above onion, celery and carrots
Place all ingredients in large stock pot bring to boil on med. heat
add 1/4- 1/2 cup butter
simmer for an hour letting flavors combine add more chicken flavor to taste salt and pepper
add 1 Tbsp brown sugar
Just before serving add 1 1/2 cup whip cream or milk and heat
serve with bread....DELICIOUS CREATION
You never know what might come about at 4 in the morning!
