Bacon or prosciutto wrapped shrimp

Fresh Raw peeled and deveined shrimp

Bacon or prosciutto

Hot pepper peach preserve (lazy Daisy Cottage)

Apricot Jam

Butter

Wrap shrimp in bacon or prosciutto

grill 3-4 min. on each side

Glaze:

1/4 cup Hot pepper peach preserve

2T. Apricot Jam

2T butter

melt in microwave

brush over shrimp

reserve remaining sauce for dipping.

Spinach Salad

1/2 head romaine lettuce chopped

1 package spinach

1/3 purple onion chopped

1/2 lb bacon, cooked crisp and crumbled

6-8 mushrooms thinly sliced

1 cup grated swiss cheese

assorted berries in season

Dressing

3/4 Tbsp poppy seeds

1/3 c. vinegar

3/4 c oil

1/3 c. sugar

3/4 tsp. salt

1/3 tsp dry mustard

warm slightly in microwave to melt sugar
